Terrific Raw Tabouli

If you love mediterranean food, tabouli is a must! A little more hearty than a regular salad, filled to the brim with delicious flavors this simple raw vegan version from my "TRA Retreat Treats" Low Fat Raw Gourmet recipe book offers a nice fat free kick!

  • Yields: 1 Large serving or 3 small servings

Ingredients

1/3 medium cauliflower (.3 lb / 136 g)

1 roma tomato (.25 lb / 115 g)

1⁄2 red pepper (.125 lb / 57.5 g)

1/2 cucumber (.25 lb / 115 g)

1⁄4 cup red cabbage, shredded (.125 lb / 56 g)

1⁄2 lemon (.11 lb / 29.5 g)

1⁄2 mango (.25 lb / 115 g)

1⁄4 bunch Cilantro (.05 lb / 22.25 g)

1⁄4 bunch Parsley (.05 lb / 22.25 g)

4 Green Onions (.12 lb / 60 g)

Optional:

Dash of Cumin

1/2 cubed avocado

Directions

Chop and pulse cauliflower in a food processor until resembles “couscous” pill like texture. Alternately simply finely shave off the florets of 1 cauliflower, makes a “couscous like” texture.

Remove insides of tomato, place in blender and dice the rest adding to cauliflower.

Dice red pepper, cucumber (removing seeds and placing in blender) shred cabbage and herbs.

Blend tomato insides with cucumber insides, lemon, mango and optional Ingredient, if desired, till smooth.

Mix well with tabouli mixture and let sit to marinate 1/2 hour.

Mix and serve with falafel or in a cabbage leaf itself!

Hot Tip:
1⁄2 an avocado cubed and stirred in can cream up and add depth to this dish.
