This is a raw, vegan version of Russian salad.

Ingredients

The base:

2 zucchinis

1 cucumber

1 carrot

"Mayonnaise" dressing:

1 mango

2 Tbsp of sesame seeds (I personally use shelled, and see no logics in using unshelled, but you are free to choose of course :))

juice of 1 lemon

Directions

Peel the veggies.

Dice the zucchinis and cucumber.

Grate the carrot.

Put the diced and grated veggies into a bowl and mix them together.

Add the lemon juice to the veggies and massage it into the veggies.

Cut the cheeks off of the mango.

Spoon the flesh out of the mango cheeks.

Peel the mango flesh around the pit and remove the flesh from the pit.

Place the mango flesh and sesame seeds into the blender.

Blend the ingredients into the "mayonnaise".

Pour the "mayonnaise" over the veggies and mix it all well.
