Originally, Pad Thai is a Thai dish consisting of fried noodles, vegetables and the sauce. I have created a raw, low fat version of this famous dish – with noodles made out of vegetables and almond sauce. This is a wonderful dish that will delight even the most picky eaters. At least in my experiences. I prepared this dish many times and everyone loved it. 😉

  • Yields: 1 serving



(approximately 4-5 cups of thinly sliced vegetables)

80 g daikon radish

100 g of zucchini

40 g of carrots

40 g of red cabbage

20 g red bell pepper

20 g sprouts


3/4 cup of water

6 Deglet Noir dates

12 almonds

2/3 cup chopped celery

1 tablespoon chopped green onions

1 tbsp lime juice

very small piece of ginger (1 g or 1/4 tsp)


Peel daikon radish and carrots and make nice, long, thin stripes with a peeler. The longer and the thinner, the better.

Make zucchini noodles with a spiralizer or julienne peeler.

Thinly slice red cabbage and red bell peppers.

For the sauce mix everything in a blender.

Mix the sauce with julienned vegetables and serve.
