  • Yields: about 15 fillets

3 middle size zucchinis

30 g of flax seeds

juice of one lemon

1 small beet

1 leaf of wild garlic

5 sprigs of dill

1 cup of distilled or filtered water

Soak the flax seeds for 8 hours;

Remove the water and rinse the seeds;

Peel the zucchinis;

Slice the zucchinis length-wise into 1.5 mm wide slices;

Optionally, shape each slice into fish like shapes, by cutting small slices at the each end of the zucchini slice to shape them into a fish head and fish tail;

Place the fishless fillets into the lasagne dish;

Place into the blender: water, beet, lemon juice, flax seeds wild garlic and dill;

Blend all the ingredients into a marinade;

Pour the marinade over the fishless fillets in the lazagne dish making sure that each fillet is covered in the dressing;

Leave the fillets to marinate for about 2 hours;

Take the fillets out of the lasagne dish and place them on the dehydrator trays;

Dehydrate them for about 3 hours - flipping them over after 2 hours - at 46 Celsius degrees, that is 115 Fahrenheit degrees;

Take the fishless fillets out of the dehydrator, place them on the plates and decorate with some lemon slices and chopped green onions;
