These cookies really couldn't be any easier: 3 ingredients, 1 minute in the food processor, roll 'em, shape 'em, devour 'em! I have made these cookies dozens of times, but I never get tired of the sweet figgy flavor. Black or white chia seeds work perfectly, giving the cookies a little texture and crunch. I prefer them after a few hours of chilling in the fridge, but if you can't wait then go ahead and sneak a bite.

  • Yields: 8-10 cookies

Ingredients

2 cups dried figs (I like black mission)

2 tbsps chia seeds + more for topping

3/4 tsp cinnamon

Directions

Combine the dried figs, chia seeds, and cinnamon in a food processor.

Process until it starts to clump together.

Roll the dough into balls and flatten into cookies.

Sprinkle the tops with chia seeds and press them in slightly.

Refrigerate for about an hour.

Keep in the refrigerator.
