Originally, Pad Thai is a Thai dish consisting of fried noodles, vegetables and the sauce. I have created a raw, low fat version of this famous dish – with noodles made out of vegetables and almond sauce. This is a wonderful dish that will delight even the most picky eaters. At least in my experiences. I prepared this dish many times and everyone loved it. ;)

Spiralized Apple Tartlets

These silly spiral tarts are fun to make, sweet to eat, and packed with fruit! Dried apples with add a hint of tartness to the sticky-sweet date crust, and the noodley filling is spiced with cinnamon and sweetened with a little date paste. By coating the apples in date paste and then refrigerating them for a few hours, the they soften to a sweet, sugary, fun-shaped filling. And of course, spiralizing is optional (but fun!).
